Tony’s Salted Caramel Chocolate Cheesecake

Tony’s Chocolonely is one of our most popular chocolates with customers, and our personal favourite! Tony’s are a chocolate company who are leading the way in the battle against slavery in the cocoa industry and their interesting flavours, funky packaging and BIG sized bars make it difficult to resist a bar when you come in!

This delicious cheesecake recipe combines the heavenly salted caramel flavoured chocolate with a vanilla cheesecake and Oreo cookie base! Jenny made these for our first post-lockdown family BBQ and they were very well received! 

Ingredients
130g Oreo cookies
60g butter
180g full fat soft cheese
60g fairtrade caster sugar
300ml double cream
100g Tony’s salted caramel chocolate
 
Method
Crush Oreo cookies,
Melt butter in a pan and stir in crushed biscuits,
Divide the biscuit crumbs between eight small glasses or ramekin dishes and press
down gently with the back of a spoon,
Beat soft cheese with the sugar,
Whisk cream in a separate bowl until soft peaks and stir into the cheese mixture until
thick,
Spoon this cream mixture onto the biscuit base and smooth the tops,
Melt Tony’s chocolate over a pan of simmering water, 
Pour chocolate over the top of the cheese and chill in the fridge for several hours.
